How long is it taking to approve an alien Jedi at this point in time?

That depends on a great many factors, the quality of the build, quality of the photos, amount of changes needed, judges, etc.

My Zabrak jedi took 2-3 weeks few months ago, which I consider to be fast.

If there is no discussion needed, it may depend on the availability of the judges (jedi x alien race x canon source). Generic jedi based on Ep. II or III is something different than Old/High republic named character, or that unnamed ewok jedi, that has appeared in one specific comic.
Almost a year ago, approving a human jedi took 4-6 weeks, due to availability of judges during pandemics.
