Hey TG.
I am not a Jedi so take my advice with a grain of salt.
Here are the standards:

Belt. The belts are easy to make by stitching to exact belts together for the width and then putting a third belt on top. (I think that is how it is done.)

Boots. I know they should match your belt and should be fairly simple in style. Preferably without buckles or zippers. However zippers are allowed on the inner calf. Something like this, I think, should work.

Pants. Can be simple khaki pants. No pockets.

Jeffrey gave good advice. Check the Jedi standards for the type of Jedi you're doing (Known character or generic) and build to it. If you find a bit of kit (like boots) but are not sure if they are approvable, start a build thread on the Jedi forum and post pics. In fact start a build thread anyway!, as several Jedi costume judges post comments on build threads that can be helpful in knowing what's good and what isn't. There are also tutorials on how to make things like the belt on that forum.

Boots are often a tricky bit (I know they were for my wife's jedi) depending on your foot size. The main points are: color must match your belt, either brown or black and no outside/back zippers. As Jeffrey said zippers up the inside are allowed but they should be subtle (as in no bright brass, nickle).

Hi!! Pants can be just about anything except jeans or knit. No cargo pockets. Upper pockets ae ok because your tunic should cover them. If your tunic doesn't cover the pockets its too short. The pants should be a complimentary color with your tunic.

Belt and boots should be similar in color. Both black or both brown. They can be leather or leather like. Generally the belt should be about 2 inches wide. You can make your own belt or find one on Etsy or eBay or sew 2 regular belts together as Jeffrey mentioned.
Mens boots are usually harder to find. As the others have mentioned no visible zippers on the front or outside of the boot. Zippers up the back or the inside of the leg are acceptable. You can't have visible buckles as long as they blend in with the rest of the costume but no motorcycle boots. Most people go with a riding style boot.

Please be sure your tunic is long enough to go past the crotch seam. The tabards should reach the bottom of the tunic in the front. Longer I acceptable, but shorter is not.

Lol yeah I have a belt coming in the next 2 weeks, this was just a placeholder to take a pic since I got my new saber and boots the other day
