also...color is incredibly hard to identify in movies, especially in Star Wars. The lightings and post do strange things to colors, so you have to make the decision, do you want it as it appears on screen or off. If you choose on screen, you'll probably want to narrow it down to specific scenes were the colors are similiar and then go from there. Also, I would have a woman look at the pictures then go with you. Women tend to see colors more accurately then Men.

edit: oh yeah and at least for Ep I & II, they were off-the-rack pants. I would imagine they were as well for III

I read that they used Dockers pants, don't know the color though.

I have heard that they were somewhat of a mustard color

They look very "mustard" like in pictures.

I'm going to wait until after I have my tunic fabric in hand, and then take a swatch to the store and see what matches best.

Have you tried Dickie's? The closest color match for Anakin was 874MH mahogany Dickie's pants.

and remember, if you buy pants, get them in regular fit, not the relaxed fit. The relaxed fit pants have too much material in the seat and legs and they blouse up like a balloon over the top of your boots.

The regular fit pants have slimmer legs and don't blouse as much...

You could make them yourself. Just buy a cheap and easy pants pattern and make especially the legs narrow enough as Charybdis mentioned.
Right now I'm making my first pants this way and it works rather well. I got a nice fabric with a bit stretch in it for a better fit. The color is called "camel" and it looks rather accurate - depending on the promo pictures, scene or book picture you are looking at.
